Celiac Disease
What is Celiac Disease?
Celiac Disease is an autoimmune disease that destroys the villi (hair-like follicles that absorb nutrients into the bloodstream) along the lining of the small intestine upon the intake of gluten containing products.
Celiac Disease begins with the inability to break down the gluten protein found in foods. Gluten is the protein found in wheat and related grains including rye and barley. Oats are also included due to cross contamination.
What does this mean to you?The only treatment for this disease is to abstain from consuming any gluten-containing products.
This is an all or nothing diet. Any gluten intake (even in small amounts) results in damage to the intestinal lining and a shortening of life overall.

Preparing for the Holidays.
Spring is just around the corner. Remember to order your fresh baked bread or rolls to go with your holiday ham. Fruit pies, cakes, cupcakes, and cookies are always available for your special gathering.

Our son is on a gluten-free, casein-free (GFCF) diet. Providing him with special treats that the rest of us take for granted is not easy. Over the years, I’ve found some decent cookie recipes that we can use for special occasions. It’s still a struggle to make them come out looking half-way good.
When we found out that Brenda Kemp was baking GFCF foods, we were very excited. We decided to try her cookies. They looked FABULOUS! Any bakery would be proud to display them! Even better, they were so delicious that we ordered more! We even bought her sandwich bread. That was also a big hit! We look forward to the next special occasion when we will order more great cookies.
